Vegan Pistachio Ice Cream




As I spend more time on this beautiful earth, I've noticed my tastes evolving. It's not just about what music I listen to or what clothes I wear anymore—it's about everything, including the food I eat. Foods I wouldn't have touched before now catch my eye, like pistachios. Today, I'm sharing a vegan twist on a recipe I stumbled upon on ladaymarielle.com. If you're a fan of sweet, salty, and downright delicious treats, you've got to give this one a shot!


Ingredients:


1 cup plant-based heavy cream

1 cup vegan whipped cream

1 tsp vanilla extract

1 tsp almond extract

1/3 cup of sweetener i.e. maple syrup, coconut nectar, agave or sugar

1 package of Pistachio Jello Pudding Mix

1/4 cup crushed salted pistachio


Directions:


Mix the heavy cream, whipped cream, extracts and sweeteners until well combined. Refrigerate the mixture for at least 20 minutes. Transfer mixture into a chilled ice cream maker and process until soft serve consistency. Add the crushed pistachios at this time.  Continue processing until desired consistency. Transfer to a loaf pan lined with parchment paper or an ice cream storage container. Allow ice cream to sit briefly to soften prior to serving. Enjoy!!
